Hydrogenation
The process where hydrogen is forced into the molecular bonds of fatty acids. If hydrogenation is carried to completion, it will result in fatty acids that are saturated with hydrogen (saturated fats). However, if it is only partially done (partial hydrogenation), it can create distorted unsaturated fatty acids such as trans–fatty acids.
